Welcome to my world! I have baked 100% whole wheat bread frequently for 45 years and every once in a while it still flops. Don't get me started on my occasional failures with wild yeast starter sourdough. Fortunately I have two grown sons who will happily eat my disasters. Nothing goes to waste, at least, which I appreciate because baking is a lot of muss and fuss. I only do it because I like to eat.
Having never made bread, I have no clue or tips to give. I'm more like your friend in the kitchen who pours you a cold one to keep you going and tells you stories to keep you entertained. :-). The only bread I've ever made is banana bread. At least you tried, and I bet it's still good. I'd die for a piece of bread, celiac be damned!
